Ricotta Doughnuts (Papanasi)
Introduction: This is a very popular desert in Romania. Any restaurant serving Romanian food will have them on the menu. They are easy to make and quite versatile since the topping can be any favorite jam or fruit preserve. I made this in the morning and served them for breakfast. My son looked at them skeptical t the beginning, then he absolutely loved them. As you see in the picture, even Figaro the cat tought they are simply irresistible.

Ingredients
- 4 cups cottage or ricotta cheese - 500 g
- 2 tablespoons sugar
- 2 eggs
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- zest of a lemon
- 2 cups of flour (shifted) - 300 g
- cooking oil
- sour cream
- your favorite jam (e.g. raspberry, sour cherry, blackberries)
Instructions
- In a large bowl place the cheese, sugar, eggs, baking soda, vanilla, lemon zest and mix well using a spatula
- Add half of the flour and mix well, incorporating all of the flour; add the remaining flour until all incorporated. Cover with plastic and let the dough rest for 15 minutes.
- Divide the dough in six equal parts. Each of the 6 parts divide in two, one part smaller than the other. The smaller part will constitute the ball while the larger part will constitute the ring. Using flour so the dough will not stick to your fingers, model 6 balls and 6 rings.
- Heat the oil in a Dutch oven and fry the balls and the rings until golden
- Remove on a paper towel, drain the excess oil
- Place the ring on a plate, add sour cream on top and then add jam
- Place the ball on top of the ring and finish up with sour cream and jam. Delicious! Enjoy!
Notes
The cheese has to be well drained from water otherwise will need to add more flour and the doughnuts will not be as tender.
