Insalata Caprese
Insalata Caprese is a salad originated in the Capri Island (Italian region of Campania). Is made of fresh mozzarella cheese, tomatoes, basil and seasoned with salt and olive oil. It is perfect for a hot summer day.

Ingredients
- 4 fresh, firm medium size tomatoes
- 10 oz of mozzarella cheese
- freshly chopped basil leaves, olive oil, salt and pepper to taste or 2 tablespoons of basil pesto, recipe here
Instructions
- Slice tomatoes and cheese in equally sized slices, place on a plate
- Add the basil leaves and sprinkle with olive, salt, pepper
- Add the basil pesto to your taste
- Ready in: 5-10 minutes
