Basil Tomato Soup
The favorite soup on the Italian restaurants menu is the Tomato Basil soup, an easy to make, rich and creamy soup. Here is my version of the popular soup.

Ingredients
  • 1 tablespoon of olive oil
  • 2 medium onions, chopped
  • 1 medium carrot, shredded
  • 1 can of tomato juice
  • 1 can of chicken broth
  • 2 cans of stewed tomatoes
  • 2-3 cloves of garlic, minced
  • 1 cup of heavy whipping cream
  • salt and pepper to taste
Instructions
  1. In a medium pot add the olive oil and sauté the onions and carrots for 1-2 minutes on medium heat
  2. Add the chicken broth, tomato juice, stewed tomatoes, stir, bring to a boil, boil for 20 minutes
  3. Add the minced garlic and basil, remove from heat and puree with a hand mixer
  4. Add the whipping cream, salt and peeper to taste. Serve hot or cold with crutons or toasted bread. Enjoy!
