Watermelon Feta Salad
Introduction: If you are a fan of salt and sweet combinations, this is probably the one salad you will enjoy. I have been forever eating watermelon with feta cheese but the great twist here is the mint and the lime juice which adds freshness and a twinge of tart. I found this to be a glorious combination, thanks to 12 Tomatoes!

Ingredients
- 4 cups of watermelon, cubed
- ½ cup of feta cheese, crumbled
- mint sprigs, stems removed, chopped; extra mint leaves for garnish
- 1 tablespoon freshly squeezed lime juice
Instructions
- Place watermelon and feta in a large bowl
- Add mint leaves and pour lime juice, toss gently
- Garnish with more mint and serve immediately.
Notes
Don’t crush the mint leaves; they should still be relatively intact, but they should be fragrant.
