Walnut Chocolate Cake

Ingredients
For the cake:
  • 8 egg whites
  • pinch of salt
  • 8 tablespoons of sugar, granulated
  • 4 tablespoons of white flour, sifted
  • 8 tablespoons of ground walnut
  • 3 tablespoons of cocoa powder, sifted
  • 1 teaspoon of baking powder
For the cream:
  • 8 egg yolks
  • 8 tablespoons of sugar, granulated
  • 8 tablespoons of milk
  • 2 teaspoons of corn starch dissolved in 2 teaspoons of water
  • 3 squares of bakers dark chocolate
  • 2 sticks of butter
  • For the decoration:
  • ½ lb of walnuts, pan roasted
  • grated chocolate
Instructions
For the Cake
  1. In a mixer bowl put the egg white with the pinch of salt, mix on high speed until peaks form
  2. Add the sugar, one tablespoon at the time, mixing well after each addition
  3. In a separate bowl, mix the dry ingredients: sifted flour, sifted cocoa powder, ground walnut and baking powder
  4. Slowly incorporate the dry ingredients into the egg whites, one tablespoon of dry ingredients at the time.
  5. Divide the composition in three parts
  6. Line a 8 x 8 x 1½ in baking pan with parchment paper, heat up the oven at 375F
  7. Pour the first part of the mixture into the pan and bake at 375 F for 20 minutes. Remove from the oven set aside to cool.
  8. Repeat with the other two parts of the mixture. At the end will have three baked layers.
For the Cream:
  1. In a medium saucepan on low heat, put the egg yolks, sugar, milk, corn starch stirring continually until the mixture starts thickening. At this point, add the chocolate squares, one by one, continuing to stir until the chocolate is completely melted.
  2. Remove from heat, allow 5 minutes to cool. Add the butter cut in small pieces. Mix vigorously until the butter is melted an incorporated into the cream. Place in the fridge to cool for at least one hour.
Assembly the cake:
  1. Layer of cake, layer of cream, layer of cake, layer of cream, layer of cake, layer of cream. Finish with roasted walnuts and grated chocolate.
  2. Put in the fridge for a few of hours. Remove from the fridge and cut in rectangles. Serve with cold milk. Enjoy!
