Strawberry Panna Cotta
Introduction: Panna Cotta is a classic of the Italian cuisine. It is an easy and light summer dessert and the sauce can be of any favorite fruit.

Ingredients
  • 3 cups of whipping cream
  • ½ tbsp gelatin powder
  • ¼ cup sugar
  • 1 tsp vanilla extract
  • 1 lb fresh strawberries, hulled
  • 2 tbsp water
  • ⅓ cup sugar
  • fresh mint leaves
Instructions
  1. Dissolve gelatin in 2 tbsp cold water and let it swell for about 5 to 10 minutes.
  2. In a medium saucepan bring the cream, milk and sugar to a simmer over medium-low heat (Do not boil). When sugar has dissolved remove from heat and add vanilla extract. Let cool for 5 minutes before adding the gelatin.
  3. Add gelatin in the milk mixture and stir until the gelatin has completely dissolved.
  4. Pour it in the glass dishes and refrigerate until it sets, for about 4 hrs or better overnight. For an added effect, tilt the glass dishes and let it set in this position.
  5. In a small saucepan put the hulled strawberries, sugar and water; bring to a simmer and remove from heat
  6. With a hand blender mix the strawberries to make a smooth sauce. Pass through a strainer to make a smooth mixture. Let it cool and refrigerate until ready to serve.
  7. Before serving the panna cotta pour the strawberry sauce, garnish with fresh mint leaves and serve.
