Rosemary Cheese Oven Potatoes

Introduction: Potatoes yield a lot of health benefits if you cook them the right way. I have recently read about raw potato juice health benefits and I was amazed. I always cook my potatoes fresh, never buy them cut and frozen. Every time I pass a fast food and smell the cooking grease I feel so proud I cook my own fries from scratch!

Ingredients:

  • 2 lbs of small red potatoes
  • 2 tbsps of rosemary
  • 1 tbsp of olive oil
  • 1 cup of your favorite shredded cheese salt and pepper to your taste

Directions:

  1. Rinse the potatoes, cut them in halves, place them on a baking sheet
  2. Rub them with the added oil, sprinkle with rosemary, salt and pepper
  3. Bake for about 30 minutes at 375 until golden brown
  4. Remove from oven, sprinkle promptly with cheese
  5. Serve hot as a side dish or just by themselves accompanied by a garden salad

Ready in: 40 minutes

Yields: 4 servings
