Roasted Red Bell Pepper Salad
This is a very popular Romanian dish. In the fall, when the red bell peppers are in season, one can smell the roasted peppers around the apartment buildings. It is simple to make but very tasty.

  • 4-5 large red bell peppers
  • mozzarella cheese, cut in cubes
  • 2 tablespoons of olive oil
  • 2 tablespoons of apple cider vinegar
  • salt and pepper to taste
  • chopped fresh parsley
  1. Cut the peppers in halves and clean the seeds off
  2. Line a baking sheet with aluminum foil and place the pepper halves on it, face up
  3. Bake the peppers at 375 F for 20-25 minutes until the skin swells
  4. Let them cool for 10 minutes and peel the skin off
  5. In a cup make a vinaigrette: mix the oil, vinegar, salt and pepper
  6. Place the peppers on a plate, put the mozzarella cubes on top, pour the vinaigrette over
  7. Sprinkle with fresh chopped parsely. Enjoy!
