Reforma Torta
Introduction: Reforma Torta is of Serbian origin and consists of a rich, many-layered walnut sponge cake with creamy chocolate filling. The combination chocolate and walnuts is simply irresistible!

Ingredients
For the Sponge
- 10 egg whites
- 1 cup (120 g) powder sugar
- 2 cups (350 g) of ground walnuts
- 3 tbsp flour
Filling
- 10 egg yolks
- 1 cup (150 g) powder sugar
- 1 cup (200 g) chocolate chips (or baking chocolate)
- 1 cup (240 g) butter, at room temperature
Decoration
- Chopped roasted walnuts
Instructions
Sponge
- Preheat your oven to 350 F (175 C) degrees
- Beat the egg whites (while slowly adding the sugar) until stiff peaks
- Carefully fold in the flour and walnuts
- Divide the batter in two portions and spread the first portion evenly in a rectangular baking pan (11x7), lined with parchment paper and greased with melted butter
- Bake for 30 min in preheated oven or until the sides become golden
- Remove from oven, let it cool then cut in two long equal pieces. Here we have two pieces
- Bake the remaining batter in the same way and we will have two more pieces
Filling
- Create a double boiler (bain-marie) and cook the yolks and sugar (constantly stirring) on a medium heat for about 15 min
- Add the chocolate chips and cook for 10 min, constantly stirring. Once the mixture thickens up and you see boiling bubbles, take off of the heat and let it cool
- Beat the butter until cream, add to the mixture and let it cool completely
Assembly
- Lay one base piece, spoon chocolate filling and cover with another piece
- Spoon some more of the filling again and cover it with the next piece and so forth
- Use the rest of the filling to cover the cake
- Decorate with chopped roasted walnuts, refrigerate for few hours and serve. Enjoy!
