Pasta with Ricotta and Walnuts

Ingredients
  • 1 lb of short pasta (here I used farfalle)
  • 1½ cup of ricotta cheese
  • 5 tablespoons of grated parmesan cheese
  • ½ cup of fresh basil leaves
  • ½ cup of walnuts
  • 1 large garlic clove
  • 4 tablespoons of extra virgin olive oil
  • salt and pepper to taste
Instructions
  1. Boil pasta according to the instructions on the pack.
  2. In a food processor place the basil, garlic, walnuts, salt and pepper. Add the olive oil and pulse until paste is obtained, remove from the food processor
  3. In a large bowl place the ricotta cheese, add the walnut basil paste and the parmesan cheese, mix well until a homogenous consistency is obtained. If the mixture is too thick, you may add some water from the boiling pasta or heavy whipping cream to obtain the desired consistency.
  4. Drain the pasta and place them back in the pot. Add the ricotta mixture and mix well
  5. Serve immediately with extra parmesan. Enjoy!
