Pasta with Ricotta and Walnuts

Ingredients
- 1 lb of short pasta (here I used farfalle)
- 1½ cup of ricotta cheese
- 5 tablespoons of grated parmesan cheese
- ½ cup of fresh basil leaves
- ½ cup of walnuts
- 1 large garlic clove
- 4 tablespoons of extra virgin olive oil
- salt and pepper to taste
Instructions
- Boil pasta according to the instructions on the pack.
- In a food processor place the basil, garlic, walnuts, salt and pepper. Add the olive oil and pulse until paste is obtained, remove from the food processor
- In a large bowl place the ricotta cheese, add the walnut basil paste and the parmesan cheese, mix well until a homogenous consistency is obtained. If the mixture is too thick, you may add some water from the boiling pasta or heavy whipping cream to obtain the desired consistency.
- Drain the pasta and place them back in the pot. Add the ricotta mixture and mix well
- Serve immediately with extra parmesan. Enjoy!
