  • 1 tbsp of olive oil
  • 8 eggs
  • 1 red onion, finely sliced
  • 1 green red pepper, sliced
  • 1 red bell pepper, sliced
  • salt, pepper
  1. In a large pan, over medium heat, pour some olive oil and saute the onions and the peppers for about three minutes
  2. Crack the eggs over the sauteed vegetables
  3. Sprinkle with salt and pepper
  4. Cover the pan with a lid and cook until the eggs are done to your liking
  5. Remove from heat and serve with toast
  6. Enjoy!
