Mexican Breakfast Eggs

Ingredients
- 1 tbsp of olive oil
- 8 eggs
- 1 red onion, finely sliced
- 1 green red pepper, sliced
- 1 red bell pepper, sliced
- salt, pepper
Instructions
- In a large pan, over medium heat, pour some olive oil and saute the onions and the peppers for about three minutes
- Crack the eggs over the sauteed vegetables
- Sprinkle with salt and pepper
- Cover the pan with a lid and cook until the eggs are done to your liking
- Remove from heat and serve with toast
- Enjoy!
