Kohlarbi (German Turnip) is a vegetable that can be found at most grocery stores, but very few people buy it. It is a kind of cousin of the cabbage and brings many health benefits: it is nutrient and fiber dense but low in calories and loaded with vitamin C.

- 2 kohlarbi heads
- 1 tablespoon of olive oil
- 1 tablespoon of lemon juice or apple cider vinegar
- salt and pepper to taste
- Peel the kohlarbi heads, make sure to remove all the woody part
- Grate and place in a medium bowl, add lemon juice, olive oil, salt, pepper, mix well. Enjoy!
