Insalata Caprese is a salad originated in the Capri Island (Italian region of Campania). Is made of fresh mozzarella cheese, tomatoes, basil and seasoned with salt and olive oil. It is perfect for a hot summer day.

  • 4 fresh, firm medium size tomatoes
  • 10 oz of mozzarella cheese
  • freshly chopped basil leaves, olive oil, salt and pepper to taste or 2 tablespoons of basil pesto, recipe here
  1. Slice tomatoes and cheese in equally sized slices, place on a plate
  2. Add the basil leaves and sprinkle with olive, salt, pepper
  3. Add the basil pesto to your taste
  4. Ready in: 5-10 minutes
