Garlic Fried Zucchini
This is a popular dish in Romania during the summer when zucchini is in season. It can be done using squash, eggplants, cauliflower, green tomatoes.

Ingredients
- 4 zucchini
- 2 eggs1/2 cup of flour
- •salt and pepper
- frying oil
- 2 cloves of garlic
- 1 tbsp of olive oil
- 2 tbsps of water
- fresh dill, chopped
Instructions
- Wash the zucchini, peel and cut in slices ½ inch thick
- In a shallow bowl beat the eggs with salt and pepper, place the flour in another shallow bowl
- Dip each zucchini slice in the egg mixture, then roll it in the flour, then dip it in the egg mixture again
- In a frying pan, bring the oil at the frying temperature
- Place the zucchini slices in the heated oil and fry for about 2 minutes on each side, until golden brown
- You may cook the zucchini in batches, until all the zucchini is cooked
- Remove from the pan, place on absorbent paper towel
- Prepare a garlic sauce as follows: mince the garlic, place in a small shallow dish, add a tablespoon of olive oil, salt and pepper, mix well, add two tablespoons of water.
- Remove the zucchini from the absorbent paper towel onto a plate and put the garlic sauce on top, sprinkle with dill.
- Serve immediately as a side dish to meat or fish.
