Garlic Fried Zucchini
This is a popular dish in Romania during the summer when zucchini is in season. It can be done using squash, eggplants, cauliflower, green tomatoes.

  • 4 zucchini
  • 2 eggs1/2 cup of flour
  • •salt and pepper
  • frying oil
  • 2 cloves of garlic
  • 1 tbsp of olive oil
  • 2 tbsps of water
  • fresh dill, chopped
  1. Wash the zucchini, peel and cut in slices ½ inch thick
  2. In a shallow bowl beat the eggs with salt and pepper, place the flour in another shallow bowl
  3. Dip each zucchini slice in the egg mixture, then roll it in the flour, then dip it in the egg mixture again
  4. In a frying pan, bring the oil at the frying temperature
  5. Place the zucchini slices in the heated oil and fry for about 2 minutes on each side, until golden brown
  6. You may cook the zucchini in batches, until all the zucchini is cooked
  7. Remove from the pan, place on absorbent paper towel
  8. Prepare a garlic sauce as follows: mince the garlic, place in a small shallow dish, add a tablespoon of olive oil, salt and pepper, mix well, add two tablespoons of water.
  9. Remove the zucchini from the absorbent paper towel onto a plate and put the garlic sauce on top, sprinkle with dill.
  10. Serve immediately as a side dish to meat or fish.
