Garlic Tomato Chicken

I love garlic. Sometimes I eat it raw to my husband's despair. Garlic is a widely recognized health enhancing supplement. Garlic promotes the well-being of the heart and immune systems with antioxidant properties and helps maintain healthy blood circulation. One of garlic's most potent health benefits includes the ability to enhance the body's immune cell activity. This is popular Romanian dish called "Ostropel".
Ingredients
  • 2 chicken breasts
  • 1 tablespoon of olive oil
  • ¼ cup of flour
  • one large onion, chopped
  • 1 green pepper, cut in small cubes
  • ½ jalapeño pepper, cut in small cubes*
  • ¼ cup of white wine
  • 1 can of diced tomatoes
  • 3-4 cloves of garlic, minced**
  • fresh parsley
  • paprika, salt, pepper to taste
Instructions
  1. Cut the chicken in pieces and pat dry with paper towels. Sprinkle with salt, pepper, paprika and dredge in flour.
  2. In a medium saucepan, heat the oil and cook the meat for 3-4 minutes on each side on medium to high heat.
  3. Add the onion and the green pepper over the chicken, cook together for 3 minutes, stir continually
  4. Add the wine and lower the heat to medium and cook for 10 minutes
  5. Add the canned tomatoes and cook for another 20 minutes on low heat
  6. Add the garlic, jalapeño pepper, salt and pepper to taste, cook for 3 more minutes
  7. Take off the heat, sprinkle with fresh parsley
  8. Serve over rice or corn meal. Enjoy.
Notes
*Use jalapeño pepper cautiously based on your taste tolerance and its hotness. **You may add less if you are not a garlic lover
