Chocolate Cream Cheese Truffles
Introduction: Who does not like chocolate truffles, those little balls made of chocolate ganache and covered in all kinds of irresistible coatings? They remind us of festive occasions or simply of taste of a good chocolate. As many other remarkable cuisine creations, truffles come out of the greatness of the French cuisine. There are numerous varieties of truffles and endless flavorings. It is surprising how easy it is to make truffles. Just mix the ingredients, shape them up and roll in the coating. That's it, no baking. So let's make some truffles.

  • 4 oz cream cheese, softened
  • 1½ cups confectioners' (powdered) sugar
  • 1½ cups semi-sweet chocolate chips, melted
  • ¾ tsp vanilla or orange liqueur (optional)
  • ½ cup crushed walnuts
  • ¼ cup coconut flakes
  • ¼ cup cocoa powdermix
  1. Add softened cream cheese to a mixer bowl and mix on low speed until creamy
  2. Add powdered sugar ½ cup at a time and blend on low speed until all sugar is incorporated
  3. Add melted chocolate and vanilla (or liqueur) and continue to mix on low speed until all is an homogeneous mixture
  4. Transfer truffle mix onto wax paper, wrap and refrigerate 1 to 2 hours until it becomes harder and easy to shape into balls.
  5. Remove from the refrigerator and shape into balls of a walnut size
  6. Place crushed walnuts, coconut flakes and cocoa powder into 3 small dishes and roll truffle balls in desired coating then serve. Refrigerate for few hours and serve. Heavenly good! Enjoy!
