Chicken Spinach Roll
A fancy looking dish but very healthy and easy to make.

  • 1 lb of chicken breast
  • 2 tbsps of butter
  • ½ lb of fresh spinach leaves
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 eggs
  • 1 cup of bread crumbs
  • 1 tbsp of cayenne pepper
  • salt and pepper
  1. In a medium saucepan on medium heat, melt the butter, add the chopped onions until soft for about 1 minute
  2. Add the spinach and continue to stir until the leaves are soft for about 3 minutes
  3. Add the minced garlic, salt and pepper to taste, drain water, set aside
  4. Butterfly the chicken breast and using a plastic wrap pound the chicken flat
  5. Pat dry with paper towels, sprinkle with salt and pepper
  6. Place the spinach mixture on top of it, roll and secure with tooth picks
  7. In a medium bowl, beat the eggs and using a brush apply the egg mixture on the rolls
  8. Put the bread crumbs on a plate and mix with cayenne pepper
  9. Roll the chicken into the bread crumbs covering them entirely with crumbs
  10. Preheat the oven to 375 F, place the rolls onto a baking sheet. Bake for 35-45 minute until juices run clear.
  11. Remove from the oven, remove tooth picks and serve. Enjoy!
