Chicken Liver Loaf
Introduction: This a twist of a traditional Romanian recipe, widely cooked on Easter time. If you are a fan of liver pate, this will be a dish you will enjoy.

  • 1 lb of chicken liver
  • 1 onion, finely cubed
  • 1 green bell pepper, finely cubed
  • 1 red pepper finely cubed
  • 2 garlic cloves, minced
  • 3 eggs
  • 2 tablespoons of bread crumbs
  • fresh parsley, finely chopped
  • fresh dill, finely chopped
  • fresh basil, finely chopped
  • salt and pepper to taste
  1. Rinse the liver in cold water, drain.
  2. Put the chicken liver in a medium pan and cover with water, bring to a boil and boil for about 15 minutes.
  3. Remove from the heat, drain, allow to cool.
  4. Chop the liver up in small cubes and place in a large bowl.
  5. Add the rest of the ingredients, mix well.
  6. Prepare a small baking pan: grease it with a stick of butter, sprinkle flour on it and shake off the excess flour.
  7. Pour the liver mixture into the pan smooth the surface with the back of a spoon
  8. Bake in preheated oven at 375F for 30 minutes.
  9. Remove from the oven, allow to cool. Remove from the baking pan, slice. Serve cold in a sandwich or as an appetizer. Enjoy!
