Chicken Dumpling Soup
This is a light and refreshing soup, flavorful and very good when served hot. When having a cold, eating this hot soup this is almost like a remedy.

  • 1 large chicken breast
  • 1 large onion
  • 1 large carrot
  • 1 cup of flour
  • 1 egg
  • 1 bunch of parsley
  • salt and pepper to taste
  1. In a large pan add 3-4 liters of water. Add the onions cut in large cubes and the carrot cut in slices.
  2. When the water is boiling, add the chicken breast cut in cubes . Bring to a boil again and skim if necessary. Boil for 30 minutes
  3. Meanwhile prepare the dumplings: in a bowl add the flour, egg, salt and much water required to bring the flour mix to a consistence that would allow dumplings to form without being drippy.
  4. With a teaspoon take a little of the mix and dump in the soup, one by one until the flour mix is over.
  5. Let it boil for another 20 minute until the dumplings came up to the surface of the soup.
  6. Add salt and pepper to taste, sprinkle with chopped parsley and serve hot. Enjoy!
