Brazilian Carrot Cake
Introduction: I have not made a carrot cake before, this is my first tryout. I was attracted by the simplicity of this video recipe that inspired me to make it. I changed the sugar quantity from then original recipe since I do not like my cakes too sweet. This recipe brings a twist to the traditional carrot cake, because it is made with chocolate glaze. This is what it looks like, and needless to say that it tastes as good as it looks.

Ingredients
For the Cake
  • 3 medium sized carrots, peeled and sliced
  • 3 eggs
  • ¾ cup of vegetable oil
  • 2 cups of flour, sifted
  • 1 cup of sugar, sifted
  • 1 tbsp. of baking powder
For the Chocolate Glaze
  • 1 cup of sugar
  • 1 cup of chocolate powder
  • ¼ cup of milk
  • ½ stick of butter
Instructions
The Cake
  1. Place carrots, eggs, oil in a blender and process until smooth
  2. In a separate bowl mix the dry ingredients: flour, sugar, baking powder
  3. Add the carrot mixture to the dry ingredients, mix well with a spatula to homogenize
  4. Pour the mixture in a buttered and floured round baking pan
  5. Bake for 45 min a d 350 F
  6. If the toothpick comes out clean it is ready, remove from the oven set aside to cool
The Glaze
  1. In a medium pan place all of the glaze ingredients
  2. Mix well and cook over low heat
  3. When it starts to boil stir for one minute then remove from heat
  4. Pour over the cake and let it cool
  5. Slice and serve. Enjoy!
