Beouf Salad
This is a traditional Romanian dish, generally served during all festive and special occasions. It can be done with beef, chicken, turkey or ham. The name may suggest a French culinary influence as the word "beouf" is French for beef, but the dish is of Russian origin from salad Olivier or Russian salad. This salad is normally served with some french bread and can be a meal in itself. The dish is usually made up in large quantities for the whole party. It's eaten as a side dish/salad to fried meats or as an appetizer/entre.Depending upon your taste, you may add more or less from the ingredients listed below. I prefer equal quantities from each ingredient, about 1 cup of each:

Ingredients
  • 1 chicken breast, deboned, boiled and chopped
  • ½ lb of potatoes (3 -4 potatoes), boiled and chopped
  • ½ lb of carrots (3-4 large carrots), boiled and chopped
  • 1 can of sweet peas
  • 1 cup of pickled cucumbers, chopped
  • 1 cup of marinated red peppers, chopped
  • 1 cup of black olives, chopped
  • 3 hard boiled eggs, chopped
  • 4 tbsps of mustard
  • 1 cup of mayo (readily made or homemade)
  • 1 tbsps of lemon juice
  • salt and pepper to taste
Instructions
  1. Boil the potatoes and carrots with skins on, let it cool
  2. Boil chicken breast separately until tender, let it cool
  3. Peel and chop vegetables and chicken into small pieces or bigger pieces if you like. Mix everything together and add the mayonnaise and enough mustard to make the mixture a light lemon yellow color. Save some mayonnaise for the glaze. Add lemon juice, salt and pepper to your taste.
  4. Spread and smooth onto a plate, then cover with mayonnaise like a glaze. Decorate as you please.
