Beetroot Salad

Introduction: If you’ve ever wondered about beetroot benefits, you’ll be shocked to find out that it’s one of the healthiest root vegetables  that’s    ever existed. Beetroot health benefits are so great, you sure don’t want to pass the chance to boost your body with the live enzymes, minerals and vitamins it contains! Next time you decide to go shopping for vegetables, make sure you include beetroot in your vegetables list. (Source: original site).  

Ingredients:

  • 2 beetroots (large)
  • 2 tbsp of olive oil
  • 2 tbsp of lemon juice or apple cider vinegar salt to suit your taste

 Directions:

  1. Using a fork, pierce the beetroots and then place them on the oven rack, bake for 45 minutes to 1 hour, at 400 F until soft.
  2. Take them out of the oven, let cool. Peel the skin with a knife, grate.
  3. Place the grated beet in a bowl, add olive oil, lemon juice and salt.
  4. Mix well and enjoy!

Ready in: 1 hr

Yields: 2 servings
