Beef Basil Sausages
Introduction: Ground meat flavored with spices and herbs, combinations are endless. In Romania, especially at Christmas time when by tradition the pig is slaughtered, people make their own sausages. I recall eating those smoked sausages made by my Mother and they were so tasty! So inspired by the memories of my childhood, I have decided to make my own sausages, spiced and flavored the way I like it. It is not hard to make your own sausages. It takes is a meat grinder, a sausage funnel and sausage casings. I found the natural casings at my local Fiesta store. Here is a favorite recipe of my family:

  • 1 lb of ground beef
  • 1 tbsp of salt
  • 1 tbsp of ground pepper
  • 3 cloves of garlic, minced
  • 1 tbsp of paprika
  • 1 bunch of fresh basil, finely chopped
  1. Mix all of the ingredients in a large bowl
  2. Cover and set in the refrigerator overnight to allow the meat to absorb the flavors
  3. Rinse and desalt the sausage casing according to the instructions on the pack
  4. Set the sausage funnel on your meat grinder and sausage away!
  5. Pierce them before grilling or frying. Enjoy!
