Beef Basil Sausages
Introduction: Ground meat flavored with spices and herbs, combinations are endless. In Romania, especially at Christmas time when by tradition the pig is slaughtered, people make their own sausages. I recall eating those smoked sausages made by my Mother and they were so tasty! So inspired by the memories of my childhood, I have decided to make my own sausages, spiced and flavored the way I like it. It is not hard to make your own sausages. It takes is a meat grinder, a sausage funnel and sausage casings. I found the natural casings at my local Fiesta store. Here is a favorite recipe of my family:

Ingredients
- 1 lb of ground beef
- 1 tbsp of salt
- 1 tbsp of ground pepper
- 3 cloves of garlic, minced
- 1 tbsp of paprika
- 1 bunch of fresh basil, finely chopped
Instructions
- Mix all of the ingredients in a large bowl
- Cover and set in the refrigerator overnight to allow the meat to absorb the flavors
- Rinse and desalt the sausage casing according to the instructions on the pack
- Set the sausage funnel on your meat grinder and sausage away!
- Pierce them before grilling or frying. Enjoy!
