Banana Bread

kcalIt seems that I always have at least one banana rotting out in my fruit basket. So what to do with those almost musshy bananas? Yes, you guessed, will turn them into a glorious Banana Bread. The yummy inviting smell that will soon inundate your kitchen will just make your mouth watery. The best recipe I ever tried is inspired from Joy of Baking, I just love Stephanie’s recipes, they are the best. Let’s maker it!
Ingredients
1 3/4 (cups (225 grams) all purpose flour
1/2 cup (100 grams) granulated white sugar
1/4 cup (55 grams) light brown sugar
1 teaspoon (4 grams) baking powder
1/4 teaspoon (1 gram) baking soda
1/4 teaspoon (1 gram) salt
1 teaspoon(4 grams) of ground cinnamon
1 cup (120 grams) chopped walnuts or chopped pecans
2 large eggs, lightly beaten
1/2 cup (113 grams) melted and cooled butter
3 large well ripe bananas
1 teaspoon of vanilla extract
Directions
- In a large bowl combine the flour, sugars, baking powder, baking soda, salt, cinamon and the chopped walnuts.
- In a medium sized bowl combine the mashed bananas, melted butter, eggs and vanilla. Fold the wet ingredients (banana mixture) into the dry ingredients, mix until all incorporated and homogenous, do not over mix.
- Prepare the loaf baking pan: brush with melted butter and dust with flour, then shake off the excess flour.
- Pour the mixture into the buttered loaf pan, level off with a spatula.
- Bake for 50 to 60 minutes at 350F (180C). Bake until golden or the toothpick inserted in the middle comes out clean.
- Remove from the oven and let it cool. Remove from the pan, slice and enjoy!
Notes
- Cinnamon and banana make a wonderful flavor.
