Apple Carrot Celery Salad
Fresh vegetables are very well known for their healthy contribution to our diet. Here is a quick,easy and healthy combination of fresh grated vegetables packed with vitamins.

Ingredients
  • one large celery root (1 cup of grated celery)
  • two carrots (1 cup of grated carrots)
  • two apples (1 cup of grated apple)
  • ½ cup of resins
  • the juice from a lemon
  • olive oil
  • salt and pepper
Instructions
  1. Grate the celery, carrots, apples
  2. Put them in a large bowl, add the raisins, add lemon juice, olive oil, salt and pepper to taste. Mix well and enjoy!

    Florence – Thank you for visiting my site and please accept my apologies for the late response to your good questions.
    First question: using celery stalks instead of celery root may work if you chop the stalks very finely instead of grating. This is a great idea, I will try it the next time. The combination of flavors should be preserved.
    Second question: I would not recommend preparation ahead of time for the reason that shredded apples oxidize very easily. You may try, however I believe they will lose their freshness.

    Can I prepare this ahead of time. I’m hoping Saturday afternoon because if so I will be traveling with it on Sunday morning and it will be included in our after church Thanksgiving Celebration which we will have this Sunday at Mountain Christian Fellowship.

    Can I use Celery instead of Celery Root. If so the celery I have won’t go to waste and I won’t have to run out and get more ingredients.
