Apple Cake
Introduction: This is the cake of my childhood, my Mother used to make it starting late in the summer from the summer apples in our garden and late in the winter from those apples that would keep over the winter. One thing about our modern life is that fruit and vegetables have lost their seasonality. You can buy tasteless perfect looking apples all year round but nothing compares with the true taste of the homegrown organic apple. The smell of this cake baking in the oven brings sweet childhood memories back to life, I see her smiling and serving us the mouth watering delicious pie. Here is my version of my Mother's apple cake.

For the Shell
  • 4 cups of flour
  • 1 cup of sugar
  • 1 teaspoon of baking powder
  • 1 cup of butter (4 sticks)at room temperature
  • 3 tablespoons of milk
  • 1 egg
  • 2 teaspoons of lemon zest
  • 1 teaspoon of vanilla
For the Filling
  • 2 lb of apples, peeled and cored
  • ½ lemon
  • 1 cup of sugar
  • ½ cup of apple juice
  • 4 tablespoons of corn starch
  • 1 teaspoon of cinnamon
For the Shell
  1. In a large bowl mix the dry ingredients (flour, sugar, baking powder)
  2. Add the butter cut in small pieces and mix with bare hands
  3. Add the egg and the milk and continue to knead until a homogenous dough ball has been obtained
  4. Cover with plastic and refrigerate for at least 30 minutes
For the Filling
  1. Grate the apples and sprinkle with lemon juice mixing well to prevent oxidation
  2. Add the remaining ingredients and incorporate into the apple mixture, set aside
Assembly of the Cake
  1. Remove the dough form the fridge and divide in two equal balls
  2. Roll each the dough between two parchment papers into the size of a baking pan
  3. Place the first sheet into the baking pan (with the parchment paper attached to it)
  4. Place the filing on top of it
  5. Place the second dough sheet on the top of the filling
  6. Place the cake into the heated oven at 375F for 45 minutes or until golden
  7. Remove from oven, sprinkle with white granulated sugar and allow to cool
  8. Cut in squares and enjoy!
